I am a sucker for Mexican food, it’s by far my favorite because I’ve spend some time enjoying authentic dishes. My family loves American Mexican, think Taco Bell. This dish satisfied all of us, and I will say that even I enjoyed it because I threw in a little extra to satisfy my distinct Mexican palate, and that was a bit of fresh cilantro on top.
The cool thing about this casserole is not only does it save me a trip to the taco joint, but it combines the hearty biscuits with the taco mixture instead of taco shells. The biscuits soak up the flavor of the meat, and then the cheese bubbles up which is a win for me, I always love bubbly crust. I put a bit of Mexican seasoning on the top of the biscuit dough as well.
