One of America’s favorite veggies is the main ingredient in this cake, and topped with fluffy cream cheese frosting it has blessed many a household for years and years. Yes! You guessed it… carrot cake! Everyone has their choice of methods to make this tantalizing treat, but any way you do there’s no denying it’s a great way to eat your vegetables.
I’ve had my carrot cake with all the extras to include raisins, walnuts, and all sorts of fillers but I never enjoyed them as much as a straight up simple carrot “cake” and not a dense, bread-like version. It should be sweet enough to qualify as a dessert, but not so sweet that it gives you an instant toothache. This recipe is the perfect balance.
