In the summertime especially I love my zucchini. I’ve made several dishes with it but never considered making a casserole with my beloved zucchini and cream cheese. There are only five ingredients in this dish, but it tastes like so many more!
I love the crushed butter crackers on top, I could seriously eat this all day. And apparently my family could, too, since there were no leftovers! Since the zucchini is partially cooked in the microwave prep time is very fast.
I’d just be sure it’s not overcooked since it should be tender crisp before going into the oven to bake. The result is a flavorful, cheesy delight that goes perfect with your favorite meat on the grill. We served up some lemon-garlic chicken wings and it when together very well.

Quick Tip: Add as much garlic as you like. I used fresh pressed and it was amazing.
