I’ve never been a fan of eggplant, and I’m not sure if it’s the combo of egg and plant that throws me off – yes I’m strange. Everyone in my extended family absolutely loves it though and I always felt left out. Thank goodness I found this recipe that made me a believer! It’s cheesy, Italian and an easy winner that cooks up in your crock pot. Now I can join the club!
I actually used three cheeses thought the recipe calls for just two. I like my cheese, what can I say? I put half mozzarella instead of all Parmesan, because for some reason my kids equate ‘pizza cheese’ with a good dish. I don’t know how their minds work but I roll with it!
