I have a love/hate relationship with casseroles. I love them because they generally taste very good, are super simple to put together, and are real crowd pleaser! On the other hand, some casseroles can be super dry because they don’t have enough wet ingredients and then the casserole bakes all the moisture away.
It can make for a really disappointing experience if you were really craving a casserole. That’s why this casserole is one of my favorites. It’s super moist, and has a layer of Campbell’s creamy soup!
It reminds me of a Tex Mex lasagna in all the right ways! This recipe serves as a good base of any variation you’d like to try, and you’re welcome to make your own modifications, such as adding jelapenos, or queso, or salsa! I love serving this casserole with various toppings, like pickled peppers or olives, so that each person can change up the flavor in their favorite ways.
