I’ve been making the same tuna salad recipe forever. It’s a good one – creamy mayo, crunchy sweet pickles, chopped hard boiled egg and diced apple. It’s the same recipe I used to eat after school as a girl, served on white bread with the crusts cut off. I remember how I would throw my backpack into my room and rush to the kitchen where Mom would already be fixing me a plate full of this yummyness. Oh, the memories a simple dish can bring to you!
I love that tuna salad and I always will, but sometimes you just need a little change. After trying this recipe, I realized there was room for my tuna tastes to grow up a little bit. I’m excited to add this one to my recipe box! Maybe some day this will be the dish that brings back all those childhood memories for someone.
