You’ll Feel Right At Home With This Southern Breakfast Casserole

Casseroles were always my mom’s go-tos when I was little. It seemed like basically everything we ate came out of those 9 by 13 pans. It was fine with me though, because she was so good at making them. It didn’t matter what ingredients she tossed in there, it always came out tasting amazing. One of my favorites was her breakfast casseroles. She had a few different ones that should would make, but the one that was like this one from Louisiana Bride was by far my favorite. After finding this online, I couldn’t wait to make it.

Honestly, after I grew up and moved out of the house, I kind of forgot about the whole casserole way of cooking. It was just me and my husband for so long, making a big casserole like this seemed kind of silly. There was no way that we were going to be able to eat the whole thing.

Now that I have kids of my own, I can make this and not worry about storing leftovers, because there usually aren’t any. If there are, they actually hold pretty nicely in the fridge and I can warm them up later in the day or even the following day and they are still just as tasty.
