What A Fun Weekend Casserole!

My first born nephew was celebrating his sixth birthday. I was so happy to be a part of his party! He looked so happy running around with his “Birthday Boy” shirt and cap on. I couldn’t stop thinking of how happy I was the day he was born. It seemed like it was just yesterday. After watching him play with his friends for a little bit, I went in to see if my brother needed any help with getting the food together. Usually he just ordered pizza but this year he said that his wife wanted to do something different.

I passed by the trash and saw tons of empty Dorito bags…. hmmmm. Then, I went into the kitchen and saw several casserole dishes with a yummy and very cheesy looking casserole inside. It was kind of like this recipe from Spend with Pennies and he called it Dorito casserole.

“Well that looks good!” “It is…” my brother said, “…and it’s so easy to make too.” It was a huge crowd pleaser among all the kids and adults at the party. I took a gift for my nephew but I walked out with this recipe so I felt like it was my birthday too!
