No-Fry Ritz Cracker Crunchy Chicken

My Aunt Sharon used to be the best cook. She could do up anything you could think of in what seemed like seconds. Whenever we went over there, she couldn’t wait until someone said that they were hungry. She would practically skip to the kitchen to get her apron wrapped around her. At one point in her life, she wanted to go to culinary school, but after having kids and getting married, she kind of gave up on that goal. It worked out well for us, because we got to enjoy all of her talents.

One of the foods that she used to make was a crispy breaded chicken like this one from Recipe Lion. I always thought that it was fried chicken because it was so crunchy, but it left me wondering why there was no grease to speak of.

It was only years later that I discovered it was actually a chicken piece coated in Ritz crackers and baked! How genius is that! Now I have the recipe myself and I feed it to my family all the time. I never feel guilty about putting this in front of my family… it’s the healthiest “un-fried” chicken you’ll ever have.
