We had a work function coming up. Training for some new procedures and policies…yay! Not so much. Training is my least favorite part of the job, but it has to be done. My boss knows how much we dread these things, so he said that if we wanted to do a potluck brunch to lighten the mood a bit we were more than welcome to. Well alright then! Everyone thought that sounded like a fabulous idea. Now, what to make? So many options out there.
I had seen a recipe for sausage and egg casserole on All Recipes that I had been waiting to try out and I figured this was the best time to do just that. If I didn’t like it, surely someone would. Actually, everyone loved it! This was the first dish to get emptied out.
Everyone thought I had been making it for years and wanted the recipe. It was so simple and affordable to make, I’m sure I will be making it for years now. The compliments are going to pour in like water when you make this, so just be prepared!
