Tantalizing One-Pot Tortellini & Sausage

One of my very good friends growing up was part Italian. She was quite the fire cracker. Come to think of it, she still is. She has the biggest heart, and boy can their family cook! My mom was a single mother, so she never really had a lot of time to spend in the kitchen to begin with. She surely didn’t have time to learn how to cook new meals. She usually made the same spaghetti, goulash, enchiladas, tuna casserole, things like that over and over again.

They were good, don’t get me wrong, but they were nothing like Tina’s Mom’s recipes. She was full-blooded Italian so it was in her veins to be an amazing cook I think.

I would go over there for dinner as often as I could. The meal that she made that I couldn’t miss was her sausage and tortellini. It was just like this recipe from Tried and Tasty. She always made a huge pot full of it so I could take second and thirds if I wanted.

Now that I have the recipe, I can make it for my family, and even my mom! She loves this dish too.
