Tex-Mex Galore With This Chicken And Rice Casserole!

Whenever I remember the time that I was pregnant with the boys, I couldn’t help but laugh out loud. My husband would always look at me with amusement until he catches sight of my playful grin. He would then know what I am thinking about and then he would laugh with me. Those were probably one of the most memorable phases of our married life. And probably one of the most frustrating ones, just ask him.

My husband has so much patience during my pregnancy. I think I was really a pain in the behind. I think I craved for a lot of things and at the same time, I craved badly during the wee hours of the morning. Still, he made sure to give me anything I wanted.

It wasn’t just me and we both knew it. There were two little babies inside me that needed whatever it was I was craving for. So the papa-to-be couldn’t help but indulge his little family.

One of the things I craved for so badly was Tex-Mex food, which wasn’t exactly the healthiest but definitely the tastiest! I remember how my husband would wait for Taco Bell to open just to get me my burrito. He would sleep in the car and be the first one on the counter.

This cheesy and savory Tex-Mex casserole reminds me of those moments. And it never fails to bring warmth to my heart.
