A few years back I used to skip breakfast completely. My excuse was lack of time; it seemed I was always in such a hurry to get ready and leave for work.

It was kind of true, actually. I had a very long commute, and every morning I had to rush to be ready on time. It all changed when I started working from home. I decided I would wake up early, take my time getting ready and prepare a healthy breakfast before I start working. It has made a big difference in the way I feel throughout the day!

But lately I’ve been getting a little tired of my breakfast dishes. You know how it is; when you’ve found something you like, you make it often, and then you kind of get too used to it. Oatmeal? Nah, don’t feel like it. Coffee and toast? Doesn’t seem like that kind of a morning, either. Cereal? Thanks, but no thanks. That’s how I felt – but then I came across this recipe!
