The first time I ever saw turnip greens was in a can. My friend’s mother was cooking one afternoon and she opened up a can of turnip greens and dumped the blob of mush into a frying pan. It looked absolutely horrendous! I was really hoping that I didn’t have to eat that with my dinner that evening. My mom always told me that if you are a guest in someone else’s home, you eat what they prepare for you. I had to choke those weird looking greens down. Yuck!
Move forward a few decades and I am faced with fried turnip greens once again, only this time, they are from a restaurant in North Carolina and made perfectly. I decided that I needed to find myself a good southern recipe and make these greens in my own kitchen. The results were phenomenal.
