We are now neck deep into the month of October and it is definitely soup season. This roasted veggie minestrone soup is the perfect supper on a cool evening. Shoot, I think I’m gonna make this little gem for dinner before the trick-or-treaters come. I need to keep warm while I’m out there handing candy. Speaking of which, I’ll also need to take my son around the neighborhood to beg for candy.
