Did you ever think in a million years that eating pepperoni and mozzarella cheese over chicken would be good for you? Well, it is! Recently, I embarked on a low-carb/high-fat diet. You must be thinking I’m crazy for eating fat but get this, scientific research shows that fat doesn’t make you fat…sugar (carbs) do! So, this is the perfect casserole to eat if you’re on a diet like me. Pepperoni chicken bake is not only easy to make but it tastes great! I honestly think that these cookies are some of the best I have ever tried. Without the flour in the mix I find the texture of them to be quite chewy and that is something that I like.
