Southwestern Layered Salad – It’s Got Cornbread!

Last summer, we were invited to a summer BBQ over at my husband’s boss’ house.

I was so nervous. This was the man that signed my husband’s paychecks! Those paychecks are what paid our bills and kept us living the lovely life that we had. Now, I had met the boss before, but we had never been to his house before. That was going to be something different, and terrifying at the same time. To make things more difficult for me, they had asked that everyone bring a dish to pass. Oh great. How was I going to impress with my cooking?

I went frantically to my computer and start looking for recipes. Nothing seemed like it was going to be good enough for what type of party that we were attending. That was until I saw a picture of this salad on Food.com.

Not only did this look super fancy, it looked really tasty too. That was it. I had found my potluck dish to pass. I did my best to make it the way it appeared in the photo and headed out arm in arm with my husband.

Quick Tip: Cut the quantity down and put together in a regular bowl for a smaller serving.
