I noshed on this salad for days the first time I made it, because in the summertime I truly don’t like to eat heavy and hot foods. Since this Lemon Dream Fruit Salad is gluten-free I felt good about having it for breakfast, lunch and after dinner. Of course, I had to share with my family. Needless to say, the batch didn’t last long.
I love that it’s just five ingredients and the addition of maraschino cherries make it seem like a sundae. There’s something about the lemon yogurt that perfectly melds it all together. I’m planning on throwing in some shredded coconut next time to give it even more of a tropical feel. Mix this easy and refreshing salad up and take it to your next family gathering and be ready for compliments.

Quick Tip: Use Greek lemon yogurt to add extra protein. As a thicker version it gives the salad a whole new texture.
