My grandfather had one last wish before passing on to the Great Beyond. My mama’s chicken pot pie.
The other day, I was chatting with my Great Aunt Selma on the telephone and she was telling me about this amazing chicken pot pie that she had at her friend’s house. I said, “I doubt it was better than yours, Aunt Selma.” Aunt Selma laughed and told me that she isn’t the only person in the world that can make a great chicken pot pie. I seriously found that hard to believe as my Great Auntie Selma is a wonderful cook.
However, I do have to agree with my aunt that this recipe for chicken pot pie is delicious. I really think you are going to like it. Plus, it’s easy to throw together. I know my husband and kids really liked this dish, which is amazing in itself because it’s difficult to get the whole family onboard with a recipe at the same time. So, I guess it’s fair to say that I did well with this one.
After making this chicken pot pie I was inspired to make a country apple pie, too! I guess you could say that I was in a superior baking mood. My kids thought we were eating two pies for dinner, and basically, we were!
