You won’t go back to mac and cheese once you’ve tried this! I was on the lookout for a simple, new casserole recipe and I guess my friend’s stories about Italian food were on my mind, since all I could think of was a nice pasta casserole. I even invited her over for dinner to see if this dish would bring back memories.
She sure thought this tasted authentic!
This recipe makes about 8 servings and will be ready in 45 minutes, from start to finish. You can tweak it as you go, using your favorite ingredients, and it will always be just as delicious!
1-2 garlic cloves, minced
Preheat oven to 350 F. Grease a 9×13″ baking dish or spray with nonstick spray.
Cook pasta according to package directions, and drain.
Heat the oil in a saucepan over medium heat. Cook the mushrooms for 1 minute, and set aside. Melt margarine in the saucepan. Add the flour, minced garlic, and basil. Gradually stir in milk until thickened. Add 1 cup cheese and stir until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the baking dish, and top with remaining cheese.
Bake in the preheated oven for about 20 minutes, until bubbly and lightly brown.
