Fully Loaded Cheesy Breakfast Casserole

 

Breakfast is the most important meal of the day, so they say. I have to agree. I mean, think about it, your first meal of the day fuels you back up and gets you going again. I know that when i skip breakfast or eat something lame like a bowl of cereal I don’t have the energy that I need. So, breakfast casseroles are a go-to meal for this gal and her family. I make up a big old casserole on Sunday nights and we eat it all week for breakfast.

The following recipe gives you a simple way to create a basic breakfast casserole that includes all of the good stuff like cheese, eggs, sausage, and bacon. Yum! I can smell it baking now 🙂

 

Ingredients

1 pound Hormel Bacon, cooked and chopped
12 ounces Jimmy Dean Breakfast Sausage Roll
1 (28 ounce) package frozen cubed OreIda hash browns with peppers and onions, thawed
2 cups (8-ounces) Kraft shredded medium cheddar cheese
12 large eggs
1/2 cup whole milk
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon McCormick garlic powder

Instructions

Preheat oven to 375°F. Butter a 9×13-inch baking pan.

In a large skillet over medium heat, cook the sausage until browned, crumbling it with a spatula as it cooks.

Add hash browns, sausage, bacon and cheese to the casserole dish. Toss to combine.

In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk until completely combined. Pour the egg mixture over the hash brown mixture.

Bake for 35-40 minutes until a knife inserted in the center comes out clean.

To Make Ahead: Refrigerate overnight. Allow casserole to sit on counter for about 30 minutes before baking.
