I am so impressed with the Making Memories With Your Kids blog. Erin, the owner of the blog, has so many great ideas to share! Not only does she write amazing recipes but she also has craft and activity ideas to do with your family. thank you so much, Erin, for sharing this chocolate dipped snowball cookie recipe with us. You say in your blog post “not to eat them all at once” but how does one do that? LOL!
Check out what Erin from Making Memories With Your Kids had to say about this recipe:
Why it took so many years for someone to think about dipping these flaky, buttery cookies in chocolate is beyond me. So a huge thank you, Dorothy. You’ve changed the look of Snowball Cookies forever. You make these like you would the traditional Snowball Cookie except don’t roll them in powdered sugar after baking them. Let them cool.
I am so excited to make this yummy recipe for my next family gathering!
Ingredients
1 cup Kerrygold butter, softened
½ cup Domino powdered sugar
1 teaspoon McCormick vanilla
2 ¼ cups Gold Medal flour
¼ teaspoon Morton salt
¾ cup finely chopped nuts (pecans, walnuts, or almonds) or mini chocolate chips, optional
16 ounces melting chocolate (almond bark or Candiquik), chocolate or vanilla
Powdered sugar for garnish, optional
Instructions
Preaheat oven to 375°. Line two cookie sheets with parchment paper or silicone baking mats.
Mix butter, ½ cup powdered sugar, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the nuts or chocolate chips, if using. If dough is too soft, chill it until you can work it easily with your hands. It will come together fast with a stand mixer, slower with a hand mixer.
Scoop 1 tablespoon balls of dough onto prepared cookie sheets. Bake cookies for 7-8 minutes until bottoms are just slightly brown. Remove from oven and cool completely.
Melt chocolate according to package directions. I like to melt it in paper bowls because it’s easy clean up. Dip each cookie into the chocolate, roll and tap off excess. Place on a cookie sheet lined with wax paper and chill to harden. You can add sprinkles while the chocolate is wet if you want.
For garnish, sprinkle with powdered sugar.
