Recently my daughter and I stopped by a local farm and picked some fresh cherries. While we were picking the cherries my daughter and I talked about what we would like to do with them. Lots of ideas came to mind but one of the first things she said was make ice cream topping. Of course I agreed so that is exactly what we did. After picking Cherries I headed to my local Walmart and purchased Vanilla Bean Blue Bunny Ice cream to pair with my Cherry Ice Cream Topping.

We are in the throes of winter right now here in Pennsylvania so we welcome foods that comfort us, such as your cherry ice cream topping. Krista is a fabulous cook and runs a wonderful blog called “Heavenly Savings”. You should really go and check her out and dig through her virtual recipe box. It’s a gem!
Ingredients
2 Cups Fresh Cherries – Pitted
1 Cup Water
1/4 Cup Domino Sugar
1/2 tsp McCormick Almond Extract
1 TBS Argo Corn Starch
** Will also need a Cherry Pitter if you use fresh cherries.
Instructions:
1. Place all ingredients in a saucepan.
2. Cook on Medium heat until water starts to boil.
3.Boil about 2 minutes stirring often.
4. Turn heat to low and simmer (stir often) about 4-5 more minutes or until sauce starts to thicken. (If it gets too thick you can always add more water….or more cornstarch if not thick enough)
5. Serve over your choice of Blue Bunny Ice Cream Flavor and enjoy!
