This salad is seriously easy to make and it tastes absolutely delicious. I know it’s more of a summertime salad but hey, who says you can’t eat it when the weather gets chilly? I love eating fresh veggies during the winter months because they remind me of summertime and my beloved garden. Here in Pennsylvania, it is December and having a garden is still a distant memory haha!
The recipe calls for only a couple tablespoons of mayo but as you can see from my picture I used a tad bit more. I like my cucumber salad to be creamy.
Ingredients
1 Cucumber, diced
1 C Cherry Tomatoes, diced
3 Slices of Bacon, cooked and crumbled
1/4 C Red Onion, chopped
2 Tb. Kraft Mayo
2 Tb. Hidden Valley Ranch Dressing
1/4 Tsp. McCormick Garlic Powder
Salt and Pepper to taste
Instructions
I first start by chopping all the veggies up and placing them in a bowl.
Then I take my bacon that has been cooked, drained, and crumbled and place it in the bowl.
Now make the dressing. Pretty easy really. Mix the mayo, ranch, garlic powder and salt and pepper.
Gently toss the veggies with the dressing. Allow the salad to set for about 15 minutes. It will bring out the natural juices of the veggies and it also gives everything time to get to know each other.

Quick Tip: To lighten it up, use turkey bacon and a mayo substitute.
