Gingerbread cream cheesecake bites are like heaven in dessert form.
For as long as I can remember, I’ve always been a huge fan of gingersnap cookies. When all the other kids were picking out chocolate chip or peanut butter cookies to eat I was asking for the gingersnaps. So, you can imagine my delight when I came across this amazing recipe for gingerbread cream cheese bites. These little bites are seriously so rich and creamy that they just kind of fall apart in your mouth.
I made a test batch yesterday and the results turned out astonishing. My husband and kids could not stop eating these bites and quite honestly, neither could I! I had to take the rest of them down to my neighbor Sally’s house so that we wouldn’t eat any more of them.
If you plan to make these for a holiday gathering I would recommend doubling the batch or event tripling because they go super fast.
