I have to admit, I was quite skeptical upon trying this casserole.
I mean, cheese with butternut squash and sweet potatoes? Really? I didn’t think that those ingredients sounded so good together, however, I was sorely mistaken. This gratin casserole turned out better than I could ever have imagined and my kids and husband liked it too! The ingredients are whole and simple and the instructions to making this wonderful bake are sincerely simple. I think this butternut squash and sweet potato side dish makes the perfect addition to any meal, especially ones where you want to impress 🙂
