Perfectly Pumpkin Cinnamon-Chip Cookies: One Of Autumn’s BEST Treats

This recipe nicely balances sweetness with those classic pie spices to give the cookies a rich and well-balanced flavor, and the generous amount of butter and natural moistness of the pumpkin yield cookies that are reasonably soft but still hold together nicely. Of course, if some of the spices aren’t to your liking, you won’t have much trouble tweaking things a bit. I think for a chunkier cookie you could even toss in some white chocolate chips or nuts.

Ingredients

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3/4 cup unsalted butter, at room temperature (I used Land O’Lakes butter)
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup pumpkin (The original recipe provider used Libby’s canned pumpkin.)
1 large egg
2 teaspoons vanilla extract
1 cup cinnamon chips

Cinnamon Sugar Topping:
1/4 cup granulated sugar
2 teaspoons ground cinnamon

Instructions:

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.

Whisk together flour, baking soda, baking powder, salt, and spices. Set aside.

Cream the butter and sugars together until light and fluffy. Add the pumpkin, egg, and vanilla and mix until combined. Slowly add in the dry ingredients and mix until just combined. Stir in the cinnamon chips.

In a separate bowl, mix together sugar and cinnamon. Shape dough into rounded tablespoons and roll in the cinnamon sugar mixture. Place a couple of inches apart on the baking sheet, then lightly press down on the cookies.

Bake for 10-12 minutes or until cookies are just beginning to brown around the edges. Cool on the baking sheet for two minutes before transferring to a wire cooling rack.

Quick tip: Make sure you let the cookies cool for a couple of minutes before you move them so that they will set into their shape!
