At our house over the past few years, we were going through way too much macaroni and cheese regularly.
It was easy for me to whip up a box or even a homemade recipe. I liked it because it was tasty, and I knew that the kids were going to eat it. It’s nice when you aren’t sure if they are going to enjoy the main course or not, because then you know at least they are getting something to eat. I was getting kind of tired of the same ol’ stuff all the time though, so I started to look around for different side dish options.
I found this recipe that was referred to as not macaroni and cheese. I thought to myself, why would someone name their food that? So, of course, being my nosy self, I had to check it out. Hmmmm…. cauliflower…. interesting.
We tried it out, and I’ll be honest, I was nervous about how it was going to go over with the children. My husband and I loved it… but we already really enjoy cauliflower so that was kind of a no-brainer. Much to my delight… all three kids liked it too! Yahoo! Now we can have something different once in a while. I can even make this super healthy if I want. The kids don’t even notice the difference.
