So, the other day, I was rummaging through my cupboards and freezer trying to see what I had that was outdated or needed to be used sometime soon. In doing this, I was able to create a deliciously simply pierogi casserole. Much to my delight, my pal Erin, over on the Making Memories With Your Kids blog had almost the identical recipe! Now, how on earth does that even happen? Great minds.
My husband was extremely excited that I made this casserole. he is a mega-fan of pierogies. Apparently, pierogies are a huge hit here in western Pennsylvania. I don’t know why they just are. So, yeah, he and the kiddos gobbled this casserole up like nobody’s business.
