This orange meringue pie is so sweet and yummy! I remember being in Florida last winter visiting my grandparents. They have an orange tree in their backyard and I picked a few. I used them to garnish my wonderful orange meringue pie. Boy oh boy, was it ever sweet and yummy! You are going to really appreciate this pie on a cold winter’s day.
I think this recipe is BETTER than any pie you could buy in a restaurant.
Ingredients
1 1/2 c fresh orange juice
1 tsp Land O Lakes butter
2 Tbsp Argo cornstarch
Domino sugar or honey to taste
3 Eggland’s Best egg yolks
Grated rind of one orange
3 egg whites
1 pre-baked Pillsbury pie shell
Instructions
in heavy saucepan dissolve cornstarch in 1/4 cup cold water
beat egg yolks and add to orange juice. place in saucepan with cornstarch water. sweeten to taste, this depends on how sweet the orange juice is.
cook slowly until mixture is thickened.
take from heat, add butter and orange rind zest. mix till butter melts
pour into prepared pie crust.
make meringue with egg whites, top pie with meringue and bake 350 degrees until swirls are tinted brown
