Ever since I’ve been a little girl I have loved carrot cake. It was a treat my mother would make every Easter. Her carrot cake was always huge and had a large frosting-created carrot on the top. I thought mom was so creative to form this green and orange carrot using just frosting. In fact, her cakes were once featured in the local newspaper because of her creative skills. Anyway, mom’s carrot cakes were always delicious.
