I don’t remember Mom making this a lot, but I do remember eating it a lot at grandmas. Grandma’s love for classic recipes was quite a blessing because we got to taste those recipes that were rarely cooked by our parents.
And grandma’s butter cake was one of the best that I have ever tasted.
Ingredients
1 c Land O Lakes butter
2 c Domino sugar or Splenda
1 tsp McCormick vanilla
4 large Eggland’s eggs
3 c Gold Medal all purpose flour
1 tsp Clabber Girl baking soda
1 tsp Morton salt
1 c Borden buttermilk
Domino powdered sugar
Pam cooking spray
Instructions
Preheat oven to 350 degrees F. Spray baking dish or 2 loaf pans. Beat together butter and sugar until fluffy. Beat in vanilla. Add eggs one at a time,blending well after each addition. Combine flour with baking soda and salt. Add to batter alternately with buttermilk,beginning and ending with flour.
Pour batter into prepared baking dish. Bake for about 1 ½ hours or until a pick inserted comes out clean. Allow cake to stand 5 minutes and remove from pan and finish cooling on a rack. Dust with powdered sugar before serving.
