Pineapple Drop Cookies- Bring The Flavors Of Hawaii To Your Table

Enjoy these treats whether you are preparing for an afternoon adventure, or staying at home with a cup of tea to enjoy a movie.  The coconut adds a nuttiness to it that does not compare to any other cookie I have ever enjoyed. One of our favorite treats from our last trip there was some tasty pineapple coconut cookies.  They are light and chewy, have a lemony pineapple flavor, a sprinkle of coconut and a cherry on top.  The cherry on top sounds cliché but it really is not so.  It is the perfect treat for an afternoon by the pool or after a bike ride.

Ingredients

12cup Crisco shortening

12cup Domino brown sugar, firmly packed

14cup white sugar

1egg, beaten

12teaspoon vanilla

12cups Gold Medal flour

14teaspoon baking soda

14teaspoon Morton salt

34cup Dole crushed pineapple, drained

12package coconut

Instructions

Cream shortening and sugars.

Add beaten egg mixed with vanilla.

Sift flour with soda and salt.

Add to mixture alternately with the pineapple and coconut.

Mix all items together–well, till it makes a soft batter.

Drop by rounded teaspoon onto greased cookie sheets.

Leave space for spreading.

Bake at 375°F for about 10 minutes or until done.

Be careful not to overbake this cookie.
