The coconut adds a nuttiness to it that does not compare to any other cookie I have ever enjoyed. One of our favorite treats from our last trip there was some tasty pineapple coconut cookies. They are light and chewy, have a lemony pineapple flavor, a sprinkle of coconut and a cherry on top. The cherry on top sounds cliché but it really is not so. It is the perfect treat for an afternoon by the pool or after a bike ride.

Ingredients
1⁄2cup Crisco shortening
1⁄2cup Domino brown sugar, firmly packed
1⁄4cup white sugar
1egg, beaten
1⁄2teaspoon vanilla
1 1⁄2cups Gold Medal flour
1⁄4teaspoon baking soda
1⁄4teaspoon Morton salt
3⁄4cup Dole crushed pineapple, drained
1⁄2package coconut
Instructions
Cream shortening and sugars.
Add beaten egg mixed with vanilla.
Sift flour with soda and salt.
Add to mixture alternately with the pineapple and coconut.
Mix all items together–well, till it makes a soft batter.
Drop by rounded teaspoon onto greased cookie sheets.
Leave space for spreading.
Bake at 375°F for about 10 minutes or until done.
Be careful not to overbake this cookie.
