When the weekend comes rolling around and you haven’t the foggiest idea what to make for your kids’ sleepover party, never fear, taco casserole is here.
Last weekend my daughter had a slumber party with some of her friends. Mind you, all of these little girls are picky eaters. The days of plain old peanut butter and jelly are over folks. Kids want new and exciting meals….without any onions in them haha! I saw a recipe for taco casserole as I was browsing the internet over on the Folk-Lore blog. It looked amazing. So, I decided that’s what I shall make for these girlies.
The casserole was a mega-hit with the teenage masses and my husband liked it, too. We didn’t have any leftovers of this easy-to-make casserole and for good reason…it was absolutely delicious.

Quick Tip: To add some crunch try crushing some taco chips over the top of the casserole a few moments before it has finished baking.
