We decided for our last backyard barbecue of the season last summer, we wanted to do a Mexican fiesta theme.
We invited everyone to wear their best Spanish-styled costumes. The sombreros, maracas, and music were plenty to fit with the rest of the event. It really was a huge hit. To start off the night, I was thinking about doing a chips and salsa appetizer. I had in mind what you get when you go out to eat at most Mexican restaurants. It’s really good, but I wanted something a little more for our closest family and friends to enjoy. I decided to hop online and see what I could come up with.
A blogger on the web had the perfect recipe. It was for this Mexican bean dip that looked very festive and fitting for what I wanted. The ingredients list was small so that was nice because I already had a huge list of things to buy. I didn’t want to increase my shopping bill that much.
So, I bought what I needed and served this up first when everyone started showing up in the backyard. It was a huge crowd pleaser. It was gone before the main entree came out, so I didn’t even have to worry about storing leftovers which is always a plus!
