Farmer’s Favorite Breakfast – It’ll Stick To Yer Ribs!

My kids actually love this too. When the hubby goes out to get his day started, I head back into the kitchen to get going on another one of these. I make just one for both the kids and that’s plenty to fill them up. There is sometimes even a little bit leftover for me to enjoy. It’s so quick and easy, I usually make it at least once a week. Paired up with some fresh fruit or toast, it’s a meal that’s good enough that you could even serve it for a brunch or when you have company over.

This is the best breakfast to wake up to when you know you have a busy day ahead. It’s super easy and fast to make too, so you can get it done in a hurry!

 

Ingredients

4 c potatoes, cooked and cubed
1/4 c chopped chives
2 Tbsp chopped onion
1/3 c Land O’ Lakes butter
salt and freshly ground pepper
4 Eggland’s Best eggs
1 c Kraft shredded cheddar cheese

Instructions

Cook potatoes, chives and onion in butter until lightly browned.
Season to taste.
Break eggs over potato mixture; cover, cook until eggs are done.
Sprinkle with cheese; cover and heat until cheese melts.
