My husband is a farmer. So what does that mean?
He works long, hard days, pretty much every day of the week. For him to get a day off, it’s a pretty big spectacle. Even on Christmas day he has to go out and work the farm. The animals don’t take a vacation day. So, whenever I can, I do what I can to make his day a little bit easier. I always wake up before him and make him a nice breakfast. I think that’s the only way to ensure the day is going to go as smoothly as possible.
I don’t have to stay outside in the wind, rain, and snow, so getting up a little early to me is no big deal. It’s second nature now. When I found this country breakfast recipe on the web, I knew it was going to be one that I could use again and again.
He loved it the first time that I made it, and all the times that I’ve made it since then. I always try and switch it up with different cheeses and veggies, just to make it a little different. He gets a lot of work done before he has to come back in to eat again, so that makes us both happy.
