Whenever I think of a fritter, I think of something like a pastry or donut.
When I first found this recipe, it was my curiosity more than anything that made me pick up the ingredients to try them. I like to cook and try new recipes all the time, so I was eager to get into the kitchen to see what could come out of a cauliflower fritter. How was something like that going to be any good? I mean, I like cauliflower, but I never thought about cooking it up like this.
Holy smokes! Am I glad that my curiosity got the best of me that time. Not only were they really easy to make, the flavor was like nothing I have ever tasted before. I whipped them together before the kids got home from school one day, and they were almost gone before they even got to try any.
My daughter loves cauliflower so I knew it wasn’t going to be an issue to get her to try these, my son took more convincing. He actually really enjoyed them. He kind of drowned them in dip, but hey, at least he ate them!
