Have A Ball With This Amish Ham Casserole – It’ll Tickle Your Tummy!

Now, this is my kind of casserole! I don’t know what I like more, the ham or the tasty taters! All I know is that the ingredients in this casserole complement one another nicely. It’s definitely a one-pot meal, too. You’ve got your spuds, meat, and cheese all mixed together in one delicious dinner. I like to serve this casserole with some steamed veggies such as broccoli or cauliflower florets. What a great meal. Thanks, Amy!

Ingredients

1 lb ham, cubed

1 med onion, chopped – optional

6 eggs

2 or 3 baked potatoes, diced into chunks*

2  cups Kraft shredded Cheddar and Colby Jack cheese

1 1/2 cups small curd cottage cheese

*If you  don’t have baked potatoes,

you can substitute 4 cups of frozen shredded hash browns, thawed.*

Instructions:

Combine the ingredients in a large mixing bowl.

Transfer to a greased 13 in x 9  in baking dish.

Bake , uncovered , at 350 degrees F for 35- 40 min or until set and bubbly.  Let stand for 10 min. before cutting.
