Seriously, this is one of the best coconut cake recipes I’ve ever come across. Kerrygold, you’ve outdone yourself with this one. I’ve made plenty of coconut cakes in my day but none have been as impressive as this one. Plus, this recipe calls for straight up coconut oil. I LOVE coconut oil and despite what the AHA says, it IS good for you. There, now that we have that out of the way…lol! This cake is super pretty, too.
The first time I made this cake I made it for my family to sort of test it out on them. Naturally, they loved it. However, the thing was so pretty I felt like it belonged at a wedding or baby shower. The next time someone needs an event cake I’ll be making this cloudy coconut confection 🙂
