Tuna Salad With Twisted Pasta Noodles Makes For Interesting Eats

This is a salad, so that just screams versatility. You can add more veggies if you like, switch out the cucumber for celery, swap out the kinds of greens you use, and even change the dressing to whatever you have in the refrigerator. You really cannot go wrong here with this one. There’s a disorganized mess to it that draws in the kid’s attention so it’s a nice way to get them to all eat their veggies. Even if they skip over the green leafy stuff, they are still going to be getting a pretty big portion of their required vegetables.

 

Fighting kids to eat their veggies is no longer an issue when you put this out on the table.

Ingredients

2 c plain corkscrew pasta, cooked and drained
2 Tbsp crushed parsley flakes
2 c chopped cucumber
3 can(s) Starkist tuna, drained
1 bag(s) lettuce mix
Hidden Valley buttermilk ranch salad dressing

Instructions

Cook pasta according to package directions. Rinse with cool water, and drain. Toss gently with parsley flakes and enough dressing to coat lightly. Spread evenly in bottom of a large serving bowl.
Spread lettuce mix on top the cooked pasta in the bowl.
Chop the cucumber and layer over the lettuce.
Drain tuna, flake gently with a fork and distribute evenly over the top of the cucumber in the bowl.
Top with tomato. Serve with dressing. NOTE: I’ve also served this salad “buffet style” for casual parties, allowing everyone to create their own stack 🙂
