My husband has always been really strict about our kids eating their vegetables with dinner.
I know why, too. He grew up just like I did. We had to eat at least two scoops of vegetables with every dinner unless it was something that we absolutely couldn’t stand eating. My son isn’t a real big fan of any veggie, and my daughter was close to the same way when she was younger. She’s better now, but it was pretty rough there for a while. There was a constant struggle at the table which was no fun for anyone.
All of our first choice was green beans, so a lot of times, I just made those to save the hassle. I would buy them by the case and we had them pretty much every night. After a while though, they got kind of boring and bland.
It was an awesome way to jazz up something that we were going to be eating anyway. Whenever I make our beans like this, there is never any issue with getting the kids to eat their two scoops!
