Seriously, guys, you have got to try this recipe! It’s absolutely delicious and you don’t even need to turn your oven on. Can you believe that? I love the fact that this brownie recipe includes mini marshmallows. I love those little things. This is a great dessert to make when you’re in a hurry and need a sweet treat on the fly. I enjoy bringing these brownies to church potlucks or school events for my kiddos.
This is a wonderful recipe to let your kids help you make as it’s super easy to concoct and there isn’t any oven usage.
Ingredients
2 cups Hershey semisweet chocolate chips
1 cup plus 2 teaspoons, evaporated milk, divided
1 (18-ounce) package chocolate chip cookies
2 cups Jet-Puffed miniature marshmallows
1 cup chopped Fisher pecans
1 cup Domino powdered sugar
Instructions
Spray a 9- x 13-inch baking dish with nonstick cooking spray.
Combine chocolate chips and 1 cup evaporated milk in a saucepan; cook over low heat until chocolate melts, stirring occasionally. Set aside.
In the meantime, process chocolate chip cookies in a food processor, in 2 batches to make coarse crumbs. Place crumbs in a large bowl.
Stir marshmallows, pecans, and confectioners’ sugar into cookie crumbs. Reserve 1/2 cup chocolate mixture; set aside. Stir remaining chocolate mixture into crumb mixture. Press into prepared baking dish.
Combine reserved chocolate mixture and reserved evaporated milk in a small bowl; spread over crumb mixture. Cover and chill at least 1 hour. Cut into squares.
