Southwestern Lasagna: To Give Your Family A Little Something Different

My mom was coming over for a visit recently, and it was going to be for dinner. She had been talking about how much she wanted lasagna, but she doesn’t like making it at home because it takes so long and there are always so many leftovers. I decided, being the good daughter that I am, that I would make her the dish she was craving. The problem was, I had never really made lasagna before. Gasp! I know, I always thought it was too much work, too! I wonder where I got that from.

I had to look up a recipe online to see what I could do before she showed up. Some of the traditional recipes looked pretty good. Then I found this one for Southwestern style lasagna on Living Healthy In Seattle and my mouth started watering instantly. It looked just like something that my mom would love. She goes crazy for Southwestern style foods.

When I tossed this together, I couldn’t believe how simple it was. It was ready to go when she showed up and she was shocked to see what I had come up with. The whole family really enjoyed this and with the big ol’ pan, there was plenty to go around!
