Growing up with five brothers and sisters meant a lot of stews and slow cooker meals at home. That meant Mom had to feed eight people three times a day. That’s a lot of food. She learned to be good at it though, especially seeings as we were living on a pretty limited budget. Dad worked, but Mom stayed home to take care of us. It just seemed like it was easier that way. Sure, money was tight, but we never went without everything that we needed to be happy and healthy kids.
One of her recipes that I still use today is her beef stew. I always loved when she made it. It was so hearty with all the potatoes and chunks of meat. She always served it with a side of homemade bread too so that we can soak up all the extra gravy. Nothing ever went to waste at our house.
Her recipe was a lot like this one from All Recipes. Simple, affordable, and done in a slow cooker while you’re busy doing other things. With six kids and a husband, there was no spare time. We have a busy schedule, so it works perfectly.
