Andy found another way to make my niece eat fish and vegetables, and she’s so smug she called me one day just to tell me about it. She said she found a fish recipe that my niece finally loves. It was an accident though. One time, Andy just tried this recipe she found on the internet. She said that her daughter smelled the wonderful smell coming from the kitchen so she went to investigate. She didn’t ask her mom what was on her plate, but she did ask to taste it. Much to her surprise, my niece actually finished the entire dish. And even when she said it was made of fish, my niece didn’t care and just asked for another one.

It was parmesan tilapia. Andy dipped the fish fillets in a breading made of parmesan cheese and seasoning. The recipe called for spicy coating, but since she knew that her daughter didn’t like spicy things, she omitted the red pepper flakes from the recipe. Andy said she always paris the fish with asparagus and broccoli.
And even though she never finishes the vegetables, my niece still eats a piece or two which is an improvement. Well, another point for you, Andy! I found the recipe she’s actually talking about. I have tried this too and I amd telling you, this is amazing!
