Your Family Will Go Nuts Over This Pistachio Nut Cake!

Who doesn’t love pistachio nut cake or anything with pistachio nuts on it? I grew up eating nuts because my mother always told me that nuts were better than the foiled packs of junk food that we youngsters were fond of eating. Whenever she saw us eating potato chips or something similar, she would snatch it off our hands and replace it with another foil pack, but this time, with something “healthier”; at least that’s what she often told us. It’s true though, isn’t it? Nuts are healthier than chips as long as you don’t go for the oily kind. I would do the same thing now that I’m a mother.

 

I love pistachio nuts on desserts best, which is why I am in love with this pistachio nut cake recipe. You will often see a carton of pistachio ice cream on the fridge or even pistachio cookies inside the cookie jar. Mom used to make pistachio cake (with me eating the pistachios she chopped on the sidelines), but I wanted something simpler that would allow me to make it even when I do not have much time. It’s a healthier cake than most so I will have no problems allowing a slice for Calvin and Chiyo. Fortunately, my friends often send me links to recipes that they’ve found. We have this sort of online group where we can share recipes we like. One of my friends found this and immediately messaged this to me. I have tried this pistachio cake once and it’s been a hit!
