How Much Stuff Can You Stuff Into A Potato?
I was looking for a side dish I could make of the leftover potatoes from a dinner we had had, and I wasn’t sure if I wanted to make potato salad. I do love a great potato salad, especially with the right kind of dressing! But this time I was looking for something a little different.
This recipe basically chose me! I couldn’t resist the idea of using pretty much anything from the fridge, to make these gorgeous stuffed potatoes
This is the perfect leftover dish. Besides the potatoes you can hide all kinds of things in these (although I would recommend edible items rather than toys or jewelry…)
Simply just adjust the amount of fillings depending on whether you’d like to serve this as a side dish, or have it for lunch, as is. Just don’t forget to add the cheese, people! It’s impossible to survive without cheese!

Quick Tip: You can prepare these ahead and freeze them. Bake in 350 oven for half an hour, top with cheese and return to oven until melted.
