If you’re a lover of traditional macaroni salad you are going to want to give this jalapeno version a go! It’s chock full of spicy flavors and robust herbs. It is a wonderful complement to any meal.

It’s zippy, flavorful, and fun, and is as delicious by itself as it is alongside grilled chicken, shrimp, or steaks. I made it recently on one of my Food Network episodes, and realized I’d never shared it on this here website o’ mine! It’s versatile, and you can add whatever other ingredients you want: diced avocado, chopped cilantro, chipotle (to the dressing), lime juice…or all the spices and seasonings you want.”
This jalapeno macaroni salad is definitely zippy! I love how flavorful it is and you will too! Serve it alongside any Mexican dinner such as tacos, tortillas, or casseroles. You can even enjoy it all by its lonesome as a light lunch.
Ingredients
Barilla macaroni (1lb bag)
ham (1/2lb)shopping list
Canned jalapenos (about 6)
1 Can of Green Giant corn
1/2 c Pearl sliced black olives
Kraft Mayo (about 5 full spoons)
pepper (to taste)
Morton salt (to taste)
Instructions
Cook the macaroni as instructed in package
Cut the ham in small squares
Cut the Jalapenos in small pieces
After the macaroni is done drain it (do not wash with cold/hot water)
Put it in a bowl add the mayo, pepper and salt mix it good
Add the ham and jalapenos, also pour in some of the juice from the jalapenos mix good (don’t pour in too much juice, only enough to give it a good spicy taste.)
Add the corn and black olives and mix again.
